Easy Beef Stew

Karen Ellis

Ingredients

l lb. stew beef (I like top round, cut up in big chunks, and I actually use about 1 1/2 lbs)
1 onion, cut up
4 carrots, peeled and cut up
1 can stewed tomatoes
4 celery stalks, cut up
3 potatoes, cubed
2 Tbsp. oil
salt and pepper

Directions

Put oil and beef cubes in pot on low. Heat until meat browns thoroughly. Add onion, celery, carrots, salt and pepper. Add enough water just to cover contents. Next add stewed tomatoes and cover to cook on low for 1 hour. Add potatoes and cook 1 hour more. This is simple, basic, and delicisioco!!
