Sausage Tortellini Soup

Ingredients
½ lb bulk Italian sausage
1 small onion thinly sliced
1 clove garlic, minced
2 cups reduced sodium chicken broth
½ cup water
1 ½ cups torn fresh spinach
¾ cup refrigerated cheese tortellini
2 Tbsp shredded parmesan cheese
Directions
In a small sauce pan cook sausage over medium heat, drain and remove.
Add onions and garlic and cook until soft.
Add broth, onions and sausage and bring to a boil.
Reuce heat and simmer uncovered for 10 minutes.
Return to a boil, add spinach and tortellini: cook for 7-9 minutes or until tortellini is tender.
Serve topped with parmesan cheese.
